Vada pav

Vada pav is most popular street side food in Maharashtra. The yummy spicy potatoes stuffing coated with besan and deep fried in oil gives mouthwatering taste to garlicky buttery bun.

Ingredients

  • This will come out with 13 vadas.
  • FOR POTATO STUFFING:
  • Boiled potatoes – 8 medium to large size
  • Oil – 2 TBS
  • Salt – As per taste
  • Mustard seeds – ½ TSP
  • Cumin seeds – ½ TSP
  • Curry leaves – 5
  • Crushed ginger, garlic and green chilies – 3TBS
  • Asafetida – ¼ TSP
  • Turmeric powder – ½ TSP
  • Lime Juice – ½ of big size
  • Cilantro – ¼ Cup
  • FOR FRYING BATTER:
  • Chickpea flower – 1 ¼ Cup
  • Red chili powder – ¼ TSP
  • Salt – Very little
  • Turmeric powder – Pinch
  • Baking powder – ¼ TSP
  • Water – ½ Cup
  • Oil – For frying
  • ASSEMBALIING PAV VADA:
  • Butter – As per you need
  • Garlic red chili chutney (You can find recipe of it on my site) – As per you want to make spicy
  • Water – to dilute chutney
  • Pav – Indian bun or hamburger bun, Same as amount of vada

Method

  • FOR MAKING POTATO STUFFING:
  • Take boiled potatoes and mash them roughly.
  • Take Oil in a pan. Once oil is hot add mustard and cumin seeds followed by curry leaves. When they starts to crackles add Asafetida and immediately add crushed ginger, garlic and green chilies and mix it well.
  • Let it cook for one minute and add turmeric powder, salt and mash boiled potatoes, lime juice and cilantro to it.
  • Switch off the flame after mixing it and let it cool down completely.
  • Make medium size of round bolls of potato mixture when it cools down.
  • FOR MAKING BATTER:
  • Add all the dry ingredients mentioned in list except baking soda and mix well.
  • Now add water and make smooth batter out of it.
  • Add baking powder only when you ready to fry and mix all well.
  • Heat up oil for frying.
  • Now take vadas and flatten up them and deep it to besan batter and gently put them in hot oil one by one.
  • Fry on medium flame for 2-3 minutes on both sides.
  • ASSEMBALIING PAV VADA:
  • Dilute garlic red chili chutney with water and spread it inside bun on the both sides followed by soften butter.
  • Now heat up pan and sauté them inside out for 1-2 minutes on medium flame.
  • Apply butter on other sides also.
  • Now place vada in middle of bun and fold over, pressing down gently. Serve while the potato ball is still hot.
  • Serve it with tamarind and dates chutney and green chutney. (You can get recipes of both of these on my site)
