Indo chinese sweet corn fritters

Summer is here and you can find many amazing deals at your local grocery stores on sweet corns. So guess what???? Bought some sweetcorn cobs and experimented new recipe in my kitchen for my foodie viewers. And its turn out so flavorful. Plus here I used my favorite Indo-Chinese spices and sauces which I can enjoy anytime and I wish it will be the same for my viewers too. This can be one of the tasty appetizers ever.

Ingredients

  • Corn kernels from cob – 1 Cup
  • Mashed potato (In dry) – ¾ Cup
  • Green chili – 1 small finely cut
  • Cilantro – Handful
  • Finely chopped onions – ½ Cup
  • Soya sauce – 2 TSP
  • Vinegar – 2 TSP
  • Red chili sauce –2 TSP
  • Salt – As per taste
  • Ajino motto (MSG) – ¼ TSP
  • All purpose flour – 1 TBS
  • Water – Just for sprinkling (In case you need)
  • Plain bread crumbs – As per you need
  • Oil – For frying
  • For batter:
  • Corn starch – 1 TBS
  • All purpose flour – 1 TBS
  • Salt – Pinch
  • Water – As much you need

Method

  • Remove the corn kernels from the cob and roughly chop them.
  • Take those out to microwave safe bowl and microwave it for 1 and half minutes.
  • Let it cool down to room temperature.
  • Now add mashed potato powder, green chili, cilantro, chopped onions, soya sauce, vinegar, red chili sauce, salt, ajino motto and all purpose flour to it and mix all until it has binding texture.
  • Place wax paper or plastic wrap to flat surface or pan.
  • Now shape that mixture to small dumplings with your hands or use cookie cutter to give any shape you like.
  • Fill cookie cutter with corn mixture until its ¾ full and gently pull cookie cutter.
  • Follow this same method to done with all fritters.
  • Now place those dumplings to freezer for 20-30 minutes.
  • Meanwhile make batter of corn starch, all purpose flour adding some water and salt.
  • Take those fritters out after resting time and dump one fritter at time to wet batter and coat it completely followed by bread crumbs.
  • Keep the wet batter thick if you want thick and crunchy layer of bread crumbs.
  • Follow this to all fritters and again freeze those to half hour.
  • Now heat up oil for frying and fry those fritters after they done resting in freezer.
  • First fry only one to check and then fry rest of batch.
  • Fry those for 2-3 minutes on medium-high flame.
  • cBread crumbs layer will be brown quickly so keep turning them into oil while frying.
  • Serve it hot with ketchup or any sauce you enjoy.
