Burrito bowl

Who can resist flavorful Mexican dish, Burrito bowl. Not me for sure  here I made this dish from scratch but if you want to make it short cut way, you can use canned beans, you can use frozen rice and assemble readymade salsa and guacamole. Yo…your burrito bowl is ready.

Ingredients

  • For corn salsa:
  • Corn – 1 ½ Cup
  • Jalapeno paper – 2
  • Chopped onion – 3 TBS
  • Cilantro – Handful
  • Sea salt or regular salt – as you need
  • Black paper powder – ¼ TSP
  • Lime juice – ½ of large lime
  • For black beans:
  • Black beans – 2 cups
  • Salt – As per taste
  • Water – 3 to 5 cups
  • Taco seasoning – ½ TBS
  • For Brown rice:
  • Butter – 1 ½ TBS
  • Brown rice – 1 ½ Cup
  • Water – 3 Cups
  • Garlic powder – ¼ TSP
  • For fajita:
  • Olive oil – 2 TSP
  • Sliced cut onions – 1 large size
  • Sliced cut green bell paper – 1 medium size
  • Fajita seasoning – 1 to 1 ½ TSP
  • Salt – As per taste
  • Guacamole – 1 ½ Cup or as per you need (Follow my recipe for that. You can find it in chutney section)
  • Artisan lettuce – As per you need
  • Sour cream – As per you need
  • Cheese – As per you need
  • Store bought or homemade salsa – As per you need

Method

  • For corn salsa:
  • Boil corn in hot water for 5 minutes and drain moisture completely.
  • Add all the ingredients mentioned in corn salsa to cooled corn and mix well.
  • Let it rest into refrigerator for at least 2 to 3 hours for best taste.
  • For black beans:
  • Soak black beans with plenty of water for 5 to 7 hours in warm water.
  • Now boil it in pressure cooker adding some salt for 30minues on medium flame.
  • When beans are done, transfer them to sauce pan with its water and start to boil it on open pan.
  • Add taco seasoning and boil all together until desire consistency of beans.
  • Note: Keep some more moisture than you desire because beans will soak more moisture as they cools down. Personal experience 
  • For Brown rice:
  • Heat up butter and saute washed brown rice for 4-5 minutes.
  • Now garlic powder to it and mix well.
  • Add water and little salt and let all boil.
  • Now low your flame and cover your sauce pan and let rice cook.
  • Don’t open until 30minutes.
  • Mine take 50minutes to cook.
  • For fajita:
  • Heat up oil and add onion and bell paper to it.
  • Sauté it for next 2 minutes on medium flame.
  • Now add salt and fajita seasoning to it and off the stove.
  • For assembling:
  • Start to assemble burrito bowl as we done with everything.
  • You can follow same step in tortilla too.
  • Take big serving plate and place artisan lettuce at bottom and place rice on it.
  • Now pour black beans, fajita, corn salsa, sour cream, guacamole, salsa and cheese on top.
  • Serve it hot and you will simply feel woowwwww……
