
Bottle gourd kofta curry in yogurt gravy
My husband isn’t fan of lauki but I do like it so when it’s comes to cook lauki, he always postponing it but not after this recipe. My cousin suggested this super yummy and chat-pati kofta curry which enjoyed by everyone in our house, including hubby so sharing this to my lovely viewers.
Ingredients
- FOR KOFTA:
- Graded bottle gourd – 3 cups
- Salt – As per the taste
- Garam masala – 1/2 tsp
- Red chili powder – 1 tsp
- Turmeric powder – Less then 1/2 tsp
- Coriander-Cumin powder – 1 tsp
- Cooking soda – 2 pinch
- FOR YOGURT GRAVY:
- Oil – 1tbs
- Cumin seeds – 1 tsp
- Asafetida – 2 pinch
- Yogurt – 1 cup
- Chopped onions – 1/2 cup
- Chopped tomato – 1 small size
- Crushed garlic – 2 cloves
- Chopped green chili – 1
- Salt – As per the taste
- Garam masala – 1/2 tsp
- Red chili powder – 1 tsp
- Turmeric powder – 1/4 tsp
- Coriander-Cumin powder – 1 tsp
- Water – 1/4 to 1/3 cup
- Cilantro – For garnishing
Method
- FOR KOFTA:
- Peel and grade bottle gourd.
- Squeeze out moisture from bottle gourd and add remaining mentioned ingredients in to.
- Mix everything well and steam cook these kofta in streamer for 20minutes on medium flame.
- Try to keep small size of kofta as they will puffed up in steaming as we added cooking soda in it.
- Keep it aside once it done.
- FOR YOGURT GRAVY:
- Heat up oil and add cumin seeds and asafetida to it.
- Let it sputter for while and add chopped onions and green chili to it.
- Let it cook for 2-3 minutes until onions are nicely translucent.
- Now add tomatoes and again cook it for 2 minutes.
- Now add turmeric powder, red chili powder, coriander-cumin powder, garam masala, salt and crushed garlic to it.
- Sauté all together for 30 seconds.
- Now add yogurt to it. Mix it well and add water to dilute it.
- Again cover it and let it cook on low flame for 3-4 minutes.
- Now add kofta to it and again cook it for 5 minutes.
- Serve it hot with chapati, paratha or rice.
- NOTE: Add kofta to gravy only when you are ready to have curry or kofta will soak up gravy if you will give standing time to it.
