रेस्टोरेंट जेसी मलाई कोफ्ता सब्ज़ी बनाये जटपट आपके घर पर – Creamy Malai kofta curry

Malai kofta is commonly popular main course dish in punjabi cuisine.. It’s rich and creamy orange gravy goes very well with fried potatoes and cheese kofta(bolls). Do try this at home and let me know how you like it.

Ingredients

FOR KOFTA:

  • Boiled potatoes – 3 cups 
  • Graded paneer – 1 cup
  • Chopped cashews – 2 tsp
  • Raisins – 2 tbs 
  • Kasturi methi – 1 tsp 
  • Garam masala – 1 1/2 tsp 
  • salt – As per the taste
  • Cilantro – 2 tsp 
  • Bread crumbs – 1/2 cup
  • crushed green chilis – 13/4 tsp
  • Corn starch – As per needed
  • Oil for frying – As per needed 

 

FOR GRAVY:

  • Oil – 1 tbs 
  • Black papers – 8 
  • Cinnamon stick – 1 inch
  • Cardamom – 2 
  • Cloves – 5 
  • Onions – 2 cups 
  • Tomatoes – 2 cups 
  • Garlic – 5 cloves 
  • Ginger – 2 inch
  • Green chili – 1 
  • Poppy seeds – 1/2 tbs
  • Watermelon seeds – 1 tbs
  • Cashew – 2 tbs 
  • Turmeric powder – 1/4 tsp 
  • Water – 1 cup 
  • Butter – 2 tbs 
  • Oil – 1 tbs 
  • Kashmiri red chili powder – 1 tsp 
  • Coriander cumin powder – 1 tsp 
  • Garam masala – 1 tsp 
  • Red chili powder – 1 tsp 
  • kitchen king masala – 1 tsp 
  • salt – As per the taste
  • Kasturi methi – 1 tsp 
  • Sugar – 1 tsp 
  • Water – 1/2 cup or as per needed 

Method

FOR KOFTA:

  1. Let’s start by making first kofta.
  2. Boil potatoes and peel it and mash it in bowl and add graded paneer to it.
  3. Now add chopped cashew, raisins, Kasturi methi, garam masala, salt, cilantro and bread crumbs to it and mix everything well.
  4. I am also adding some crushed green chilies to it. It is optional.
  5. Roll kofta to any shape you like. I am keeping it round and flat.
  6. Total 18 Kofta will be made out of it.
  7. Now roll this kofta to corn starch and dust excess corn starch from it.
  8. When you done with all koftas, heat up your oil.
  9. Start frying with only one kofta in begging.
  10. Make sure oil temperature is hot enough or your kofta will open up in oil.
  11. Now fry 3-4 koftas at a time here. Keep flipping it and fry those on medium-high flame for 2-3 minutes, until golden brown.
  12. Like the same way fry rest of all koftas.
  13. once you done with kofta, start to make orange gravy.

 

FOR GRAVY:

  1. heat up oil and add whole spices to it.
  2. After 30 seconds add chopped onions, tomatoes, ginger, garlic and green chilies to it.
  3. We do not need to cut it finely. Anyway, we are going to purify it later.
  4. Into that I add cashew, poppy seeds and watermelon seeds to it.
  5. Now add turmeric powder and mix all well.
  6. Add water to it and cover it and let all cook for 15 minutes on medium-low flame.
  7. Once it done, let it cool down and puree it in blender.
  8. Now heating up butter and oil to same pan.
  9. Add kashmiri red chili powder to it. This gives nice red color to gravy.
  10. Now add gravy to it and mix all well.
  11. Cover it and cook gravy for 5 minutes.
  12. Now add all spices mentioned under gravy ingredients to it and again mix it and cook more for 5 minutes.
  13. Serve kofta in bowl and pour gravy on it and serve it hot.
